If you’re looking for a quick Eggless dessert that looks like it came right out of a French bakery, you definitely will impress your guests with this one! And, it is super easy to make! Today I will be sharing a recipe on how to make homemade Eggless Blueberry Crossovers using Puff Pastry.
The star of the show is the puff pastry and guess what, you don’t need to make it from scratch because there are a lot of vegan as well as eggless puff pastry dough you can purchase from any grocery store. I’ll be using the Compliments Butter Puff Pastry which contains butter (so not vegan), but I have seen brands that are vegan, so just take a look at your grocery store if you need it to be vegan. Using the Puff pastry is what makes this recipe so easy and quick! I have seen recipes for making homemade puff pastry and I may also post a recipe on this blog as well! The only thing I will say is remember that the puff pastry is frozen, so make sure to thaw it before hand before making the blueberry crossovers!
We had actually made some puff pastries a couple of weeks ago where we played around with the recipe and different designs. Pinterest has a lot of ideas if you’re looking for inspiration and aren’t the biggest fan of crossovers. However, I found the crossover design to be the most visually appealing and fun to design.
INGREDIENTS
1 pack of puff pastry (I used Compliments)
227g container of cream cheese
3/4 cup frozen blueberries
1/4 cup sugar
2 tsp lemon juice
DIRECTIONS
For the filling, mix together 1 container of cream cheese with 1/4 cup sugar and 2 tsp lemon juice and set aside.
Slowly open up the rolled and frozen puff pastry (once it has thawed). Each package contains two rolls of puff pastry.
From each roll, cut the puff pastry dough into 4 squares so that in total you have 8 squares.
Leaving a space in the middle, cut lines horizontally on either side of the dough. See picture for visual description.
Place the cream cheese filling the middle and place a handful of blueberries of top.
Now, braid the lines over top each other to get the crossover look. Again, refer to picture for better description.
Bake in a pre-heated oven for 15 min (or until brown) at 350’F.
Let cool and then enjoy! Tastes best when fresh and warm!
