A lot of you have been requesting healthy recipes, and I’ve noticed most of the recipes on the blog are for sweets. So, you can only imagine my excitement when my food editor Manpreet came up with an amazing Vegan Mediterranean Salad with a quinoa salad dressing recipe. I whipped it up myself to test it out and it was so delicious, even my mother-in-law thought so. So, without further ado, a healthy savoury recipe!
INGREDIENTS
Mediterranean Salad:
1 cup uncooked quinoa
1 roma tomato
1/2 red bell pepper
1/3 cup cucumber
1/3 cup onion
1/4 cup olives
3/4 cup parsley
1/2 cup chickpeas
1/2 cup vegan feta
Quinoa Salad Dressing:
1/2 cup lemon juice
1/2 cup extra virgin olive oil
1/4 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/2 tsp cumin
1/2 tsp oregano
DIRECTIONS
Begin by washing the quinoa and cooking it. The best way is to add the quinoa along with 1 cup of water with a tsp of salt to a boil. Once it starts boiling, turn the heat to low and let the quinoa cook for 10-15 minutes. Fluff the quinoa once it is cooked with a fork.
While the quinoa is cooking, wash and chop all the vegetables and place them in a large bowl. To speed things up, buy some pre-sliced black olives! Also, my favourite way to cut and wash parsley is to chop it up finely first and then wash well.
Next prepare the quinoa salad dressing. Combine all the ingredients for the quinoa salad dressing into another small bowl and whisk until combined.
Once the quinoa is done cooking, combine the quinoa, vegetables and the quinoa salad dressing and mix well. Then place this to chill in the fridge of at least 20-30 minutes. This allows all the flavours to infuse and you have yourself a yummy mediterranean salad with the best quinoa salad dressing.
